Prepare Chicken and Oven
Use 2 pounds of fresh, boneless, skinless chicken. If using frozen, defrost in microwave for 2 pounds' worth of weight.
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
Make Coating

Start by whisking 1 egg in a large bowl. Add these ingredients while mixing: lemon juice, almond slices, almond flour, hummus, shredded mozzarella cheese, spices, and salt.
The spices listed in the ingredients are a suggested starting point - feel free to mix them up or up the quantity to your desired palette and spiciness level.
Coat Chicken
3 Coat Chicken and Bake

Spray the bottom of a large baking dish (about 9" x 13") with non-stick spray. Using wet hands, pinch off some of the coating mixture and smush it onto one side of the chicken breasts. It will feel like you're working with modeling clay. Then, flip the chicken breasts down into the pan, coating side down. Repeat smearing the coating for the tops of the chicken.
Top the chicken breasts with the green chiles and roasted red peppers, divided evenly.
Place pan into oven at 375 degrees Fahrenheit (190 degrees Celsius) for 1 hour.
