This protein-packed omelette recipe is super quick and easy. Plus, all of these ingredients you may already have in your fridge and pantry!

Don’t be fooled by the picture. It ain’t pretty (I couldn’t flip it in one go), but it tastes yummy. Here we go.

Start with pre-heating the olive oil on a medium skillet on the stove top.

Then, you can start whipping up the eggs in a medium bowl. You can add any spices you want, but salt, pepper, and maybe some onion powder do well in this omelette. Grab a can of chicken (the chunked, ready-to-eat kind) and add to the bowl, along with mayo and cheese.

Once it’s all combined, pour everything into the pan. Let it cook for about 10 minutes, then use a spatula to gently flip it over. It’s done once you see both sides are golden-brown and no liquids are oozing out. It’s okay if you can’t get it in one flip, it tastes great just the same if it’s divided up and flipped in pieces (e.g., in halves or quarters). Feel free to add some hot sauce, Tabasco, or Cholula to finish it off!
