Keto Bacon Flax Buns
Description
This recipe makes six keto buns. If eating these buns like you would a normal sandwich or burger, then the bottom and top parts would equal two servings, so in total if making something like hamburgers, this recipe would make enough buns for three burgers. However, you can always just use one bun and use something like lettuce on top to hold your burger in place, or if eating something like peanut-butter, butter, or a low carb jam you only need one bun.
Each bun is four net carbs.

Cook the bacon
Cook the bacon in a skillet on the stove-top (if it is uncooked "real" bacon) to your desired doneness. Alternatively, if it's cooked and only needs to be heated up, you can lay the strips on a paper plate that has a paper towel on it and heat it up in the microwave. Another paper towel can be laid on top to prevent grease splatter. Cook time in a high-powered microwave could take about 45 seconds, and possibly up to a minute if you like them extra crispy slash slightly burnt, too.
When done, take the bacon out of the microwave and either set it on the counter for now, or place in the fridge for it to cool faster.
You can start pre-heating the oven now, too.

Melt the fats
In a microwave-safe bowl, add in the coconut oil and butter. Microwave for about 60 seconds.

Make the batter
Now it's time to combine all of the main ingredients. Take the cool-to-the-touch bacon and rip them into 1" long strips and add to the bowl that has your melted fats. Then, add:
- Coconut flour
- Ground flax seed
- Baking powder
- Water
- Heavy whipping cream
- Parmesan cheese
- Mozzarella cheese
Stir well until combined.

Form the buns
On a medium-sized cookie sheet, lay out some wax or parchment paper. Spray with non-stick cooking spray.
Now that we have a batter-like "bread" mix, estimate the size of each bun if you divided the batter into sixths. With wet hands, form six balls of "dough" and place onto your cookie sheet. Smush each of the six batter balls into flatter circles (about 1/2" or 1 cm high will do fine); you can use the heal of your hand or something else that's flat (like a saucer) that's been sprayed with non-stick cooking spray to get a uniform flatness.
Sprinkle with almond slices and sea salt, then stick in the oven at 425 degrees for 25 minutes. After you take them out and let them cool, you can enjoy some homemade keto buns with that bacon and nutty flax flavor!
